Pumpkin Spice Pancakes

Discover our amazing baby pumpkin pancakes that your toddler will love. The secret to our fluffy pumpkin pancakes is a sprinkle of cinnamon to give them that little bit of extra yumminess. Why not serve our healthy pumpkin pancakes with some fruit, honey or yoghurt to give your little one a more balanced meal.

Ingredients

1 serve (230mL) prepared NAN Toddler Milk Drink or full cream cow's milk

1/2 cup (125g) pumpkin puree

1 cup (160g) wholemeal flour

1 egg

½ tsp vanilla extract 

½ tsp ground cinnamon

½ tsp baking powder

1 tbsp coconut oil for cooking

    1. Mix NAN Toddler Milk Drink, pumpkin, flour, egg, vanilla, cinnamon and baking powder until smooth. 
    2. Using a heat resistant brush, spread some of the coconut oil over a non-stick frying pan on medium heat. 
    3. Add tablespoonfuls of mixture to the pan; cook 2 minutes each side or until golden; repeat with remaining mixture, serve warm.
