Chicken Broccoli and Almond Pasta

Ingredients

200g spaghetti

1 broccoli head, cut into small florets

1 tbsp olive oil

300g chicken breast fillet, thinly sliced

2 cloves garlic, crushed

1 tsp Asian seasoning sauce

grated zest and juice of 1 lemon

½ cup (70g) slivered almonds

¼ cup (10g) chopped basil

¼ cup (10g) chopped flat leaf parsley

  • Instructions

    1. Cook the spaghetti according to packet directions; add broccoli to the cooking water for the final 2 minutes, drain, set aside.
    2. Heat oil in a saucepan over high heat; stir in chicken, garlic, Asian seasoning sauce, lemon rind and juice; cook, stirring for 2 minutes; add the almonds.
    3. Add spaghetti and broccoli to pan and cook until heated through. Add basil and parsley, toss well. Serve immediately and garnish with whole basil or parsley leaves if desired.
