1 clove garlic, crushed
1 medium (150g) onion, sliced
2 medium carrots (240g), cut into 1 cm slices
3 medium beetroots (500g), peeled and chopped
⅓ cup (80mL) balsamic vinegar
⅓ cup (75g) brown sugar
3 cups rocket (60g)

- Preheat oven to 180°C/160°C fan forced.
- Heat oil in a medium saucepan, add onions and garlic, cook for 3 minutes, add carrots and beetroot, cook for further 5 minutes. Add balsamic and sugar, cook for 5 minutes.
- Transfer mixture to a baking dish to oven and bake for 30 minutes. Cool slightly.
- Toss warm vegetables with rocket.
